GREAT GRATE SALAD

·       1 carrot, grated

·       1 small beetroot, grated

·       1 zucchini, grated

·       Finely slice ¼ of a red cabbage

·       Chop big handful of fresh parsley or herbs of choice.

·       Chop 1 handful spinach.

 

1.     Grate the veggies either with the grate disc of your food processor, or hand grater is fine too).

2.     Add chopped spinach and parsley. 

3.     Toss together and sprinkle ¼ cup of chopped toasted almonds and pepitas

 

 

Dressing – shake in a jar

·       1 tbsp greek yoghurt

·       1 tbsp olive oil

·       1 tab tahini

·       1 teaspoon Dijon mustard

·       2 tbsp apple cider vinegar

·       Juice of half a lemon

·      Salt and pepper

 

1.     Add all dressing elements into a jar

2.     shake well
