1 cup pepitas
1 cup choc chips
250g butter (softened)
1 cup rapdura sugar
2 eggs
2 teaspoons of vanilla paste or extract
2 cups of plain Gluten Free Flour ( i use well and good brand)
1/2 cup buckwheat flour
1 tsp bicarb soda
1 tsp baking powder
1 pinch mineral salt flakes
Preheat Oven to 180 deg
Line flat trays with baking paper
Place butter, sugar eggs and vanilla into food processor and whizz until combined
Add flours etc and whizz to combine.
Add in pepitas and choc chips and whizz gently to combine but not pulverise.
scoop spoonfuls of mixture on to trays and bake for 12 mins or so until golden brown.
Let cool on tray.
Makes about 15 cookies.
